Selectively picked grapes. Cold maceration ('cold soak') lasting anything from 12 hours to three days, followed by gentle pressing. Subsequent wild-yeast fermentation in old oak casks and partially in temperature-controlled stainless steel. Maturation on the lees for body and complexity, then bottling in May.
Pale lemon. Ripe fruit and herbs on the nose. Complex on the palate, with a wonderful vein of acidity as well as power and volume. Long finish.
Sourced from the terraced slopes of Nackenheimer Rothenberg, where the terroir consists of massive red shale with a very thin layer of weathered topsoil.
