Manual harvest involving several passes through the vineyard. Maceration (skin contact) for 12 hours followed by wild-yeast fermentation in stainless steel.
Complex and seductive on the nose, with peach, herbs and elegant floral and exotic notes. Notable substance on the palate, with nice salinity, juiciness and effortless minerality. A wonderful village bottling.
The grapes for this village-level bottling came from the Westhofener Kirchspiel vineyard. The terroir consists of heavy clay marl interspersed with limestone. Water-bearing veins of limestone help to keep the vines hydrated even in the hottest conditions.
