Hand-picked and hand-selected grapes (maximum yield of 40 hectolitres per hectare). Gentle pressing followed by slow wild-yeast fermentation for several weeks in temperature-controlled stainless steel. Subsequent maturation on the lees until just before bottling, to add complexity and body.
Yellow fruit, eucalyptus and wonderful minerality on the nose. Approachable, dense, pure palate of notable substance and juicy depth.
Sourced from vines that were planted over 35 years ago on limestone-rich soils interspersed with gravel and iron oxide.
