Selective harvest followed by a 24-hour cold maceration ('cold soak'), then natural sedimentation to clarify the juice. Fermentation in temperature-controlled stainless steel.
Green apple, citrus, apricot and peach initially dominate on the nose. Then a slightly smoky note also emerges. Bone dry and streamlined on the palate, with crisp, fresh acidity. Long finish with saline minerality and a delicate note of citrus.
Red sandstone soils lend the wine its characteristic minerality.
