Whites: skin contact followed by cool, slow fermentation and subsequent maturation on the fine lees until bottling. Reds: maturation in large oak casks or in small oak barrels, depending on the quality. The estate's finest wines spend up to two years in oak.
Candied apricot and pineapple on the nose. Delicate notes reminiscent of molasses and blossom honey. Elderflower syrup and orange. This is a very pure, transparent style of ice wine. Fine balance between sweetness and acidity. Elegant length with exquisite structure.
