Late, selective manual harvest. Destemming followed by a cold maceration ('cold soak'), then gentle pressing. Use of selected yeasts to trigger temperature-controlled fermentation lasting 20 to 30 days in stainless steel. Subsequent maturation for four months in stainless steel before bottling.
Pale straw-yellow colour, with green apple, Amalfi lemons, grapefruit and fresh herbs (basil and mint) on the nose. The palate is dry, with refreshing, juicy acidity underscoring citrus characters on a persistent finish.
Sourced from pergola- and Guyot-trained vines situated at elevations of between 200 and 550 metres above sea level in and around Furore and surrounding municipalities. The vineyards here are south-facing with soils consisting of calcareous Dolomite rock.
