The fruit for this Pinot Grigio is hand-picked and hand-selected. Gentle pressing followed by fermentation exclusively in oak barrels. Development on the fine lees in the same vessels for one year. Subsequent blending with at least six months of further maturation in concrete.
Straw-yellow colour. Complex on the nose, with pear, quince, red apple, lemon and vanilla. Dry on the palate, with balanced acidity and great concentration and character. Pear and subtle smoky hints on a long finish.
Fruit from various wineries in the heart of the traditional white wine area of Appiano Monte, cultivated at elevations of between 420 and 600 metres. The vines grow on exposed south- and south-east-facing slopes consisting of loamy limestone gravel, in immediate proximity to Sanct Valentin castle. They are low-yielding and aged between 15 and 32 years. Cool winds blow down from the mountains at night into the vineyards, helping to preserve acidity and aromas in the grapes.
