The grapes are naturally dried by the wind and sun after being left to hang on the vine until the end of the year, becoming almost raisin-like in the process. Gentle pressing with subsequent fermentation and élevage – partially in stainless steel, partially in small wooden barrels.
This amber-coloured, passito-style wine has a wonderfully pronounced aromatic nose of apricot, apricot jam, lychee, rose water, honeydew melon, and honey. Balanced on the palate, with juicy acidity marrying well with the concentrated residual sweetness. The finish is long, underscored by intense flavours that linger on the palate for minutes.
Fruit from various wineries in the heart of the traditional white wine area of Appiano Monte, cultivated at elevations of between 550 and 650 metres. The 20 year old vines grow on exposed south- and south-east-facing slopes consisting of loamy limestone gravel, in immediate proximity to Sanct Valentin castle. Cool winds blow down from the mountains at night into the vineyards, helping to preserve acidity and aromas in the grapes.
