Selective manual harvest at the End of September. Gentle pressing followed by cool fermentation in five- and 10-hectolitre stainless steel tanks. Subsequent maturation, including malolactic fermentation, for nine months in French oak barrels, with a further eight months of bottle ageing.
Extremely complex on the nose, with citrus, orange zest and green apple, complemented by Mediterranean herbs, dried flowers and spicy notes. Fresh and rich on the palate, with a very silky mouthfeel and a long finish ending on notes of vanilla. An exceptional and elegant white wine from the foot of Mount Etna.
Sourced from a vineyard outside the town of Randazzo, with stony and very fertile volcanic soil. The vines – aged between 10 and 20 years – grow 600 to 700 metres above level and are gobelet-trained.
