Hand-picked Pinot Noir grapes are gently pressed before being fermented in stainless steel. The second fermentation takes place in bottle, with subsequent ageing for around 12 months.
Fine aromas of apple, quince and red berries alongside notes of fresh yeast, toasted bread, and brioche. Dry and balanced on the palate. Notable, elegant bubbles. Pleasantly fruity with fine, persistent autolysis characters on the finish.
Weathered limestone- and slate-rich primary rock soils lend Eichholz wines their very own character. The property favours natural farming methods, eschewing the use of artificial fertilisers. This enhances soil life and results in wines with good ageing potential.
