Hand-picked and hand-selected grapes. Full destemming and gentle pressing, with a small batch (5–10%) undergoing a short, cold maceration ('cold soak') to produce a very pale rosé colour. Subsequent fermentation, then maturation for eight months in concrete tanks before bottling.
Pale salmon. Intense notes of raspberry, citrus and grapefruit on the nose, with a hint of dried flowers. Beautifully rounded and fresh on the palate, showing small red berries. Great balance between complexity and freshness.
Sourced from estate vineyards with a variety of different aspects as well as soils mainly comprised of loam and limestone.
