Ripe grapes picked selectively and gently into small baskets. Gentle destemming and crushing followed by temperature-controlled wild-yeast fermentation on the skins for eight days. Malolactic fermentation in stainless steel vats. Maturation for eight to 10 months in stainless steel, with regular bâtonnage (lees stirring).
Bright red colour. Aroma of red berry and wild fruit on the nose. A great Sangiovese with a perfect balance between power and elegance.
Rimini's hilly hinterlands are mainly comprised of calcareous clay soils. The fruit for this wine was sourced from vines with an average age of 15 years, growing 150 metres above sea level.
