Manual work is the foundation of everything that happens in the vineyard and at the winery. The vines are tended and the fruit is picked by hand. Foot-treading is the preferred crush method, while the grapes are manually destemmed through a grating. The entire vinification and maturation process takes place in cement tanks that are glazed on the inside.
Casa Pepe has a fascinating nose, showing lots of dark berry fruit, cinnamon-sprinkled plum and damson, dark chocolate, slightly meaty, iron-like notes, and Mediterranean herbs like rosemary and sage. Great finesse and complexity on the palate. Still a little closed for the time being, with grippy tannins. Long on the finish, with spicy chocolate notes and leathery, earthy characters. This will be a truly great wine after a few years of cellaring.
