Hand-picked and hand-selected grapes. Destemming followed by temperature-controlled wild-yeast fermentation for around 24 days, with regular pump-overs to prevent the grape skins from drying. Subsequent gentle pressing followed by maturation, including malolactic fermentation, for 30 months in French oak barrels. After bottling, the wine was kept back for a further 18 months before being released for sale.
Intense ruby colour. Fresh balsamic notes and small, ripe red fruits on the nose. Complex, delicate and juicy on the palate, with a long, fascinating finish.
Sourced from the Fiesole, Perderuccio and Perdernuovo vineyards, which are situated at elevations of 350 to 450 metres above sea level. All three sites have an easterly aspect and galestro soils.
