Low average yields. Selective manual harvest involving up to three passes through the vineyard. Wild-yeast fermentation in large 2,000-, 3,000- and 4,000-litre oak casks as well as in stainless steel vats. Then gentle pressing. Six to seven months on the fine lees for added complexity and creaminess. No filtering or fining.
Pale lemon-green colour. Delicate nose of citrus and exotic fruit – mango, banana and pineapple – along with slightly buttery characters. Dry on the palate, with stimulating acidity and a balanced, creamy, medium body. The finish is persistent, ending in tropical fruit characters with a saline mineral note.
Deep, weathered Devonian slate soil containing elements of sand, limestone and volcanic quartz porphyry.
