Manual harvest involving several passes through the vineyard. Maceration (skin contact) for 12 hours followed by wild-yeast fermentation in stainless steel.
Lovely purity and elegance on the nose, with yellow fruit aromas and chalky minerality. Lots of tension on the palate and a pleasant creamy texture on the finish
The grapes for this village-level bottling came from the Westhofener Kirchspiel vineyard. The terroir consists of heavy clay marl interspersed with limestone. Water-bearing veins of limestone help to keep the vines hydrated even in the hottest conditions.
