Hand-picked and hand-selected grapes. Gentle pressing followed by wild-yeast fermentation in large 2,000-, 4,000- and 6,000-litre oak vessels. Maturation for six to seven months in stainless steel, with extended ageing on the fine lees to lend added complexity and creaminess. No fining.
This dry Riesling – a blend of fruit from different Grosse Lagen (grands crus) – owes its dense, complex, silky mouthfeel to the small, perfectly ripened grapes of vines planted up to 120 years ago on perilously steep slate terroir.
