Very selective manual harvest and a short period of maceration (skin contact) followed by pressing and overnight settling of the juice. No malolactic fermentation. Maturation on the fine lees for 10 months in oak barrels. Regular bâtonnage (lees stirring).
Citrus, gooseberry, mango and a hint of blackcurrant on the nose. Fresh on the palate with a juicy mouthfeel, tremendous expression and slightly stony mineral notes.
Clayey and loamy gravel.
