Selective manual harvest at the end of September. Gentle pressing followed by cool fermentation in stainless steel. The wine was left to rest for a short time before bottled.
Complex on the nose, with citrus, ripe apple and floral notes with mineral hints. This Etna Bianco is dry on the palate, showing fresh, vibrant acidity and a persistent, salty, mineral finish.
Sourced from five- to 80-year-old vines that grow on volcanic soil at elevations of between 600 and 900 metres above sea level on the northern side of Mount Etna.
