Gentle pressing of Pinot Noir grapes followed by wild-yeast fermentation in 228-litre and 400-litre vessels. The champagne ages in bottle for two years on its lees before finally receiving a dosage of 2 g/l.
Gold colour. Appealing and complex on the nose, with red fruit, dried apple and delicate spice alongside yeasty notes reminiscent of panettone. This champagne has fine bubbles on the palate, with lovely intense flavours of pepper and freshly baked bread leading into a slightly salty finish.
Aurore and her boyfriend Jean Baptiste own various plots, which are spread across the Montagne de Reims, the Côte des Blancs and the Marne Valley but mainly situated in Puisieulx and Mesnil sur Oger. The couple farm their sites according to biodynamic principles, albeit without certification for the time being.
