Hand-picked and hand-selected grapes. Gentle pressing followed by fermentation, including malolactic fermentation, in oak barrels. Addition of the liqueur de tirage, with the réserve perpetuelle (reserve wine based on a solera) accounting for 30% of the wine bottled with crown caps. Ageing in bottle on the lees for 29 months. Subsequent disgorgement with a dosage of only 1.5 grams per litre.
Medium lemon. Pronounced minerality on the nose, with hints of primary fruit and lots of freshness. The mousse is fine and invigorating. Delicate, slim body with a refreshing, terroir-driven finish.
The vines, which have an average age of 45 years, grow on the very chalky terrain of Cuis.
