The grapes are always picked by hand at Clandestin before being carefully and gently pressed. Every plot is vinified separately. The first fermentation relies on wild yeast, after which the base wine rests in neutral vessels made of French oak (300 l and 500 l). Finally, the wine spends around 15 months in bottle on the lees. No filtration or dosage.
A fresh and fruity champagne. Floral notes and red berries on the nose. Mineral on the palate, with crisp red fruit that lead into a tasty, dry finish.
Les Semblables is shorthand for 'Lieux-dits similaires, voisins terriens orientés dans la même direction', which roughly means 'Similar, neighbouring plots and soils sharing the same aspect'. Instead of simply combining various vineyards, the focus here is on vinifying plots with similar characteristics, which together reflect the terroir of the Aube. Bertrand Gautherot of Vouette & Sorbée came up with the idea for this wine.
