Very selective manual harvest. Gentle whole-bunch pressing followed by wild-yeast fermentation. Maturation on the fine lees, including bâtonnage (lees stirring), in around 10% French first-use oak barrels for 12 months before being bottled unfiltered.
Medium straw-yellow in colour. Complex nose with roasted notes, apricot, spice and cooking apple. Elegant mouthfeel and pronounced fruit expression, with refreshing acidity providing wonderful depth of flavour.
Sourced from various locations, with soils predominantly consisting of sandy Goldridge loam.
