Hand-picked and hand-selected grapes. Gentle pressing followed by fermentation, including malolactic fermentation, in oak barrels. Addition of the liqueur de tirage, with the réserve perpetuelle (reserve wine based on a solera) accounting for 30% of the wine bottled with crown caps. Ageing in bottle on the lees for about 24 months. Subsequent disgorgement with a dosage of only 2 grams per litre.
Medium lemon. Pronounced minerality on the nose, with hints of primary fruit and lots of freshness. The mousse is fine and invigorating. Delicate, slim body with a refreshing, terroir-driven finish.
The vines, which have an average age of 45 years, grow on the very chalky terrain of Cuis.
