Destemming of meticulously selected grapes followed by a cold maceration ('cold soak') for 10 days at a temperature of between 4 and 12°C. Subsequent wild-yeast fermentation of intact grapes in open-top vessels. Regular punch-downs of the grape skins. Maturation, including malolactic fermentation, in oak barrels (50% first-use) for 28 months.
Dark ruby colour, with fine berry and roasted aromas on the nose. This is an extremely delicious wine on account of its varied spectrum of berry fruit, wonderfully integrated notes of nougat, and delicate hint of sweetness. Its firm tannins promise excellent ageing potential.
Calcareous, sandy loam on a bedrock of Graubünden slate.
