Gentle pressing in a pneumatic press. Slow, temperature-controlled fermentation in 350- and 600-litre vessels (second- to sixth-use) for 90 days. Subsequent maturation, including malolactic fermentation, for 12 to 18 months on the fine lees with minimal bâtonnage (lees stirring). Only minimally filtered before bottling.
This is a blend from a small, very densely planted plot within the Derriere-Chez-Edouard vineyard. According to documents dating back to the Middle Ages, pre-phylloxera Burgundy vineyards had extremely dense plantings – around 30,000 vines per hectare. The vignerons of yesteryear learned that high-density plantings created healthy competition among vine roots. This helped to improve the quality of the grapes and the resultant wine.
