Low average yields. Selective manual harvest involving up to three passes through the vineyard. Wild-yeast fermentation in large 2,000-, 3,000- and 4,000-litre oak casks as well as in stainless steel vats. Then gentle pressing. Eleven months on the fine lees for added complexity and creaminess. No filtering or fining.
Intense and extremely complex on the nose, showing citrus, quince, apple and slightly exotic notes (gooseberry and kiwi), complemented by minerality (wet stone and chalk) and delicate floral and herbal characters. This translates into incredible succulence and dense, salty minerality on the palate as well as fascinating aromatic complexity on a finish that never seems to end.
Scharzhofberger Pergentsknopp P is sourced from the estate's best plot in the famed Wiltinger Scharzhofberg vineyard, where the vines grow on some of the finest mineral-rich, blue weathered Devonian slate soils.
