Selective manual harvest at optimum ripeness. Only the juice from the first pressing ('tête de cuvée') was used. Wild-yeast fermentation in oak barrels, with a subsequent eight months spent on the fine lees. After bottling, the wine was aged on its fine lees for 20 months. This champagne is mainly composed of wine from the 2019 vintage, while reserve wines dating back to 1986 account for around 30% of the blend.
Medium lemon. Ripe fruit, citrus, and white flowers on the nose. Full-bodied and fresh on the palate, with pronounced extract and delicate spice. The finish is exceptionally pure, showing cool minerality and a hint of salinity.
Sourced from vines with an average age of 55 years, all located in the grand cru village of Cramant.
