The grapes are gently pressed after harvest, with the fermented juice left to settle for eight months. Reserve wine is then added to the vin clair (base wine), accounting for one third of the blend. Subsequent bottle ageing on the lees takes three years. After disgorgement, the champagne receives a dosage of 7.8 g/l and spends another six months at the winery before release.
Gold colour, with a nose of apple, pear, white fruit, butter, brioche and toasted white bread. The palate has a very fine mousse, which lends this champagne an almost creamy mouthfeel. Fresh patisserie and baked white bread complemented by delicate hints of white fruit.
Aurore and her boyfriend Jean Baptiste own various plots, which are spread across the Montagne de Reims, the Côte des Blancs and the Marne Valley but mainly situated in Puisieulx and Mesnil sur Oger. The couple farm their sites according to biodynamic principles, albeit without certification for the time being.
