Selectively picked grapes. Full destemming followed by gentle crushing and direct pressing. Subsequent fermentation in temperature-controlled stainless steel.
Pale salmon. Seductive on the nose with floral and berry aromas. Extremely spritzy, characterful and well balanced on the palate. The perfect wine for those warm summer days.
The fruit came from five different vineyards: Ebenezer to the north, Bethany to the south, Stonewell to the west, and two other locations to the east. These sites have a westerly aspect, with soils mainly comprised of limestone and clay.
