Manual harvest. Destemming followed by a cold maceration ('cold soak'). Subsequent wild-yeast fermentation accompanied by regular punch-downs of the grape skins. Then gentle pressing in a pneumatic press, with maturation for 12 months in used French oak barrels.
This Malbec has an intense nose of dark berry and plum, complemented by vanilla and cedar with a slightly peppery note. The palate is nice and full, with good concentration without being overpowering. Perfectly integrated acidity gives the wine a harmonious, juicy mouthfeel, culminating in an intense, long finish with fruity and mineral notes.
Sourced from vines sitting 1,250 metres above sea level on soils mainly composed of sand with minor elements of limestone and gravel.
