Sourced from very calcareous, naturally low-yielding old-vine plots. Manual harvest involving triage, with 30% left as whole bunches. Maceration (skin contact) then fermentation at low temperatures, with manual punch-downs of the grape skins (pigeage). Malolactic fermentation in second-use oak barrels. Maturation for 12 to 18 months on the lees. No filtering.
Dark, almost black, in appearance – this is a wine of great concentration. Extremely complex with a balanced amalgamation of black fruit, spice, eucalyptus and vanilla. Freshness and elegance on a delicately fruity and incredibly long finish.
Loamy sand interspersed with gravel and calcareous, iron-rich loam.
