Selective manual harvest at the beginning of October. Fermentation at relatively cool temperatures of between 28 and 30°C. Subsequent maturation, including malolactic fermentation, for 16 to 18 months in large French oak casks, with an additional month spent in stainless steel before bottling.
Medium ruby colour, with a pronounced nose of ripe fruit and spice. Well-structured, rich and complex on the palate, with silky tannins and a multilayered finish.
Sourced from a vineyard outside the town of Randazzo, with stony and very fertile volcanic soil. The vines – aged between 50 and 100 years – grow 600 to 650 metres above level and are gobelet-trained.
