Selective manual harvest at the beginning of October. Fermentation at relatively cool temperatures of between 28 and 30°C. Subsequent maturation, including malolactic fermentation, for 16 to 18 months in large French oak casks, with an additional month spent in stainless steel before bottling.
Rubinrot mit Aromen von frischen Heidelbeeren, getrockenten Cassis, Kirschen, mediterrane Kräuter und Rosenblüten. Im Gaumen trocken, mit feinen Gerbstoffen und ausgewogener Säure. Der lange Abgang wird mit Aromen von dunklen Beeren begleitet.
Sourced from a vineyard outside the town of Randazzo, with stony and very fertile volcanic soil. The vines – aged between 50 and 100 years – grow 600 to 650 metres above level and are gobelet-trained.
