Hand-picked and hand-selected grapes. Cold maceration ('cold soak') followed by wild-yeast fermentation. Maturation for 25 months on the lees in first-use French oak barrels (Taransaud and Darnajou), with regular bâtonnage (lees stirring). Malolactic fermentation also occurred during this time. The wine was bottled unfiltered before being released for sale.
Deep ruby. Blackcurrant and blackberry along with cedar and earthy notes on the nose. Exceptionally intense on the palate, with supple tannins, varied flavour expression and a long-lasting finish. A unique wine.
'Pedregal' means a rocky place in Spanish – the perfect description for this vineyard planted in 1990. The Cabernet Sauvignon vines grow on ferrous basalt soils.
