Hand-picked and hand-selected grapes. Cold maceration ('cold soak') followed by wild-yeast fermentation. Maturation for 25 months on the lees in first-use French oak barrels (Taransaud and Darnajou), with regular bâtonnage (lees stirring). Malolactic fermentation also occurred during this time. The wine was bottled unfiltered before being released for sale.
Very balanced on the nose, with dark fruit such as black cherry and blackcurrant as well as minerally, sweet and savoury characters. This expressive Cabernet showcases its complexity on the palate. Dark berries, tobacco, extremely elegant tannins and an intense sweet and savoury note round off a long finish. No wonder this wine has immense potential.
'Pedregal' means a rocky place in Spanish – the perfect description for this vineyard planted in 1990. The Cabernet Sauvignon vines grow on ferrous basalt soils.
