Fermentation followed by maturation for seven years in oak casks. Up to 40% of the wine evaporates during this time, but the casks are not refilled. A natural protective layer of yeast forms due to the ullage (or air space) at the top. This lends the wine its unmistakeable personality. Finally, the wine is filled into 620-millilitre bottles (called clavelins). This is the amount that remains from a litre of wine after evaporation during the maturation process.
Yellow with golden reflexions. Complex on the nose, with pome fruit, hazelnut, almond, mushrooms and dried fruit. A well-integrated backbone of acidity provides for a wonderfully long finish.
