Thinning and pinching of excess shoots to limit crop size. Green harvest to optimise the ripeness and health of the fruit. Manual harvest involving triage. Cold maceration ('cold soak') for 24 hours. Settling of the juice in an airtight vessel (70% of the original volume). Five-day maceration/fermentation at 18°C. Maturation on the lees with regular bâtonnage (lees stirring) until Christmas. Fining, filtering and bottling in March.
Pale lemon with golden reflections. Notes of ripe fruit, with apricot, peach and candied citrus. Aromatic, balanced and soft, with beautifully integrated acidity. Long and fruit-inflected on the finish.
Calcareous loam.
