Gentle pressing (1.0 bar) of hand-picked grapes to obtain the best possible juice and thereby preserve that typical Prosecco character. Ninety days in tank (Charmat method) to give a fine mousse. To ensure optimum freshness, bottling is only completed once the relevant order for the wine has been placed – a luxury that only small producers like Paladin enjoy.
Vibrant pale gold with a fine, persistent mousse. Aromatic on the nose, with notes of apple and pear, exquisitely underscored by a hint a honeydew melon and white blossom. Refreshing and elegant on the palate, with beautifully integrated bubbles. A spritzy, balanced Prosecco with a fruit-driven finish.
From vineyards rich in limestone and marl, situated in the hilly, tradition-steeped Prosecco winegrowing region that stretches from Conegliano to Valdobbiadene.
