Selective harvest followed by a cold maceration ('cold soak'). Fermentation in open-top fermenters. Gentle pressing then maturation for 20 months – in 60% French and 40% American oak barrels.
Deep purple colour. Seductive nose of violet, black cherry, clove, caramel and mocha, married with fine roasted aromas. Incredible concentration on the palate, with a powdery texture, velvety tannins, more dark fruit, well-integrated secondary notes, and an extremely long finish. Simply world-class.
Sourced from a vineyard planted in 1968 by Jim Barry. Today, these vines produce less than two metric tons per hectare. The soil consists of sandy gravel and receives an average annual rainfall of 600 mm. The vineyard sits on a north-west-facing slope that acts as a natural sun trap, ensuring that the fruit is always fully ripened.
