Then gentle pressing in a pneumatic press, with transfer to stainless steel (where the wine underwent malolactic fermentation). Maturation for 18 months in first-use Burgundian oak barrels as well as a further 12 months' ageing in bottle before release.
Dark ruby. Dried fruit, ripe cherry and spice on the nose. The wine is very elegant, showing an abundance of dark fruit on the palate. The acidity is assertive, lending the requisite amount of freshness. Exceptional finesse on the finish.
Sourced from vines sitting 1,250 metres above sea level on soils mainly composed of sand with minor elements of limestone and gravel.
