Hand-picked and hand-selected grapes. Whole-cluster cold maceration (no destemming) followed by fermentation in ancient Gallo-Roman vats. Gentle pressing then maturation for 12 months – 15% in first-use and 50% in used oak barrels (second- to fifth-use) as well as 35% in concrete tanks. No filtering.
Deep ruby colour. The nose shows dried strawberry, violet, blackberry and blackcurrant, followed by pepper and lebkuchen spice. A complex red wine with a balanced full body, ripe tannins and a long, slightly saline finish.
Sourced from vines sitting 240 to 400 metres above sea level. A particularly cool microclimate as well as soils consisting of calcareous marl and sand provide excellent conditions for growing wine.
