Foot-treading for a gentle maceration, then manual destemming through a grating. Wild-yeast fermentation, and subsequent maturation, in glazed cement vats. No filtering, but a dash of sulphur before bottling. Emidio and his daughters have always eschewed the use of chemicals, their main goal being to produce vibrant wines from healthy soils. All work at the winery and in the vineyards is aligned to the phases of the moon.
Slightly reductive on the nose before opening up with air to reveal pear, apricot, delicate citrus and fresh herbs. Vibrant on the palate, with refreshing acidity and a balanced body. Long and complex on the finish, with citrus notes, herbal characters and freshly ground spice.
Sourced from three different vineyards in and around Torano Nuovo – a village with 1,500 inhabitants, situated between the Gran Sasso massif and the Adriatic Sea. Mainly trained using a pergola system known as 'tendone' in central Italy, the vines are influenced less by the soil (clay) and more by the dual effect of warming air that flows down from the mountains and in from the sea – a climatic factor also reflected in the wine itself.
