Short maceration ('skin contact') followed by gentle pressing of hand-picked grapes. Cultured-yeast fermentation in stainless steel. Three-month maturation on the fine lees, then filtered and bottlled in early spring.
Medium lemon with green reflections. Fragrant nose of citrus, qunince, apricot, white peach and intense spice reminischent of white pepper. Balanced mouthfeel with forward fruit and spritzy acidity.
Sourced from the Birthal vineyard, where the vines sit on the sandbanks of what used to be a sea. The lightness of the soil lends the wine a certain fragility.
