Selective harvest followed by a cold maceration ('cold soak'). Fermentation in open-top fermenters. Gentle pressing then maturation for 17 months – in 65% first-use American oak barrels as well as 12% new and 23% used French oak barrels.
Rich, vibrant aromas of blackcurrant and black fruit with a hint of vanilla and spice. Red and violet fruit on the palate, supported by a rich, earthy undertone and fine, silky tannins. This lends excellent structure, tremendous length and aromatic persistence.
