Selective harvest. Wild-yeast fermentation in open-top vessels at a temperature of 27 to 29°C. Gentle pressing followed by blending. Subsequent maturation for six months in concrete tanks. The wine was left to rest for a short time after bottling before being released for sale.
Deep ruby. Complex bouquet with notes of dried dates, cherry, blueberry, blackcurrant and oriental spice. Soft on the palate, with a juicy, elegant finish.
The grapes for this wine are sourced in the Bekaa Valley at elevations of about 1,000 metres, where air temperatures consistently hover at around 25°C with an average 300 days of sunshine each year.
