Caroline and Basile Saint-Germain have been committed to the goal of producing authentic, premium Languedoc wines at their estate in Pézanas since 1995. They go exceptional lengths to ensure impeccable purity in their wines.

Caroline and Basile Saint-Germain are a quality-obsessed husband-and-wife team who arrived in Pézenas in 1995 with the aim of making some of the best wines in Languedoc. They are passionate idealists who prefer to intervene as little as possible in the cellar.

Fresh, mineral wines from a unique terroir

Domaine les Aurelles comprises nine hectares situated on the Nizas plateau, only around 30 kilometres from the Mediterranean. Proximity to the Massif Central tempers the southerly climate, lending the wines notable freshness. The vines sit on ancient Quaternary-era terraces covered by thick layers of gravel and mineral-rich basalt. 

Laboratory-controlled

Caroline and Basile are highly respectful of the natural environment and eschew the use of fertiliser, herbicides and pesticides in their vineyards. In 2001, they built a bioclimatic cellar made of natural stone slabs. The construction of this facility was a milestone for them, helping to ensure impeccable quality and cleanliness. They have commissioned Excell, a Bordeaux laboratory, to certify that their estate wines are free of all traces of pesticide and herbicide. Excell certification exceeds organic and biodynamic farming standards and provides for full transparency, guaranteeing authentic, high-quality wines that indulge the senses and show both exceptional purity and remarkable ageing potential.
