Gravity-flow winemaking to preserve the character of the juice. Native-yeast fermentation, minimal temperature control, and a long period (15 to 25 days) of maceration (skin contact). One year of maturation in Slavonian oak vessels.
Very delicate nose of black cherry, ripe forest fruit, herbs, pepper, leather and dark chocolate. This Sangiovese from Predappio shows soft, balanced tannins and stimulating, juicy acidity on the palate. Very fresh and elegant, with seductive floral and berry characters on a persistent finish.
Sourced from a four-hectare plot situated around 250 metres above sea level in the Predappio appellation, where the calcareous clay soil is rich in Pliocene-era sandstones that are referred to locally as 'Spungone'.
