The Chardonnay grapes for this wine are picked by hand usually in the early part of harvest season. Gentle whole-bunch pressing in a vertical press, followed by 11 months of maturation in 350-litre barrels, preferably without any bâtonnage (lees stirring). Use of no more than 50% new oak.
Slightly reductive on the nose, with citrus, pear, apple, lime blossom, exotic hints and a delicate lick of oak. This Puligny Montrachet premier cru has a rich, compact palate, with ripe fruit still slightly hidden behind the oak at this juncture. The finish is long and mineral.
Le Cailleret is one the best-known lieux-dits in Puligny-Montrachet, situated directly adjacent to the famous Montrachet grand cru and directly below Chevalier-Montrachet. The soil mainly consists of loam and limestone. Guillaume and Camille farm the site organically, albeit without certification for the time being.
