Manual harvest of ripe, healthy grapes. Traditional whole-bunch fermentation on the skins in an open-top vessel for three days. Gentle pressing at minimal pressure. Subsequent maturation, without any intervention, for eight months in used German Riesling barrels.
Beautiful nose of blackcurrant, blackberry, cherry, liquorice, clove, pepper, mocha, violet, orange zest and rose petal. Meaty and grippy but with notable elegance on the palate. Succulent and silky with spicy fruit. Complex characters, lovely use of oak and a very long finish.
Markus Schneider's 'Three Days on Skins' Pinotage was sourced from old bush vines that were planted decades ago on the granite terroir of the Bottelary Hills. These non-trellised vines grow freely near the ground, have minimal water requirements and produce intensely flavoured fruit.
